A canned profile is built for the same printer model, paper, inkset, and resolution as you may be using but was built on a different printer. Canned profiles are usually fairly good and manufacturers do a good job ensuring that their printers are consistent but there is now way for a canned profile to be perfect to your printer. A custom profile is built on your specific printer and is more accurate than a canned profile.
